The field of sensory evaluation has evolved as an applied scientific discipline of considerable interest and application to business, industry, and government. As a continuing effort to expand the field, recommended procedures have been developed that call for standardized application of sensory methods. The extent of expertise currently to be found in the area of sensory evaluation certainly warrants a more rigid monitoring of the applications of sensory test methods, especially in conjunction with instrumental scientific data.
