Chapter 5 | Free Choice Profiling

Free Choice Profiling (FCP) is a descriptive sensory technique in which each assessor uses his or her own objective terms for profile analysis and is not required to explain or provide definitions for these terms. Unlike conventional descriptive methods, FCP does not require extensive training of panelists or consensual steps for terminology and scale usage. Data from FCP are typically analyzed using Generalized Procrustes Analysis (GPA) because of the lack of uniformity of attribute scoring protocol among assessors. This technique is able to take the individual data sets from the assessors, create individual plots, and then translate, rotate and scale them to form one consensus plot that provides information on sensory spatial interrelationships between the samples. This chapter provides some guidelines for conducting FCP, including data analysis and interpretation, along with examples from reported studies in which FCP has been applied. It also presents brief comparisons between FCP and selected rapid sensory methods.
